While LDL cholesterol may be a natural and vital component for our body to transport cholesterol throughout, high serum levels of LDL comes with negative health consequences. The idea that saturated fats are good for health also tie-in to their claims regarding LDL cholesterol. It’s also important to remember that CVD risk is also just one possible negative impact of high saturated fat intake. Layne Norton had an excellent reasoning for this in a debate with CarnivoreMD: CVD risk is a lifetime exposure risk, and most of these studies account for less than 10% of lifetime exposure (5). I say almost entirely, because some studies/meta-analysis have not shown saturated fats to be a predictor of cardiovascular disease. The relationship between saturated fat and seed oils on health based on the majority of current evidence is almost entirely contradictory to their claims… Another systematic review found that higher linoleic acid consumption through PUFA moderately reduced risk of all-cause mortality, along with cardiovascular disease and cancer mortality (9). When replacing 1 tbsp of butter for 1 tbsp of olive oil, there was a 4% reduction in the incidence of cardio-metabolic mortality, and a 15% lower risk of diabetes mortality (7). Seed oils as a replacement for butter or margarine (large sources of saturated fats) have also been shown to lower all-cause mortality rates (7) (8). In-fact, the consumption of polyunsaturated fatty acids (PUFA) has even shown to reduce inflammatory mediators (6). However, the consumption of seed oils has not shown a pro-inflammatory response. They claim linoleic acid (primarily sourced from seed oils) will cause inflammation in the body, promoting the development of disease and other negative health consequences. They often dismiss the negative impact of high saturated fat intake on health, even going as far as saying that LDL cholesterol doesn’t increase risk of cardiovascular disease. It is popular for those who follow this diet to demonize seed oils, vegetables, and grains/legumes (1). Spread by the likes of Carnivore MD, the Carnivore Diet is one that idolizes meat, organs, raw dairy, honey, and fruits (although many on this diet have foregone honey/fruits).
